The Best Dairy Free Vegan Milks – A Complete List of the Options

Since eliminating animal milks from our diet, we have tried out a series of vegan milk products. This resulted in a lot of trial and error as we learned that some are good for drinking and others are good for cooking. A few are good for both. So to save you from the expense and nuisance of testing yourself here is a list of the good, the bad and the numbers behind each of the milks that are readily available. As you read this list be aware that the numbers around nutrients back out the impact of the supplements. I just think that is a separate consideration. If I had a child who refused other forms of supplements, I would be looking for the added calcium, selenium, and zinc found in some of these products. I don’t have a child with those issues so I prefer to avoid food with built in supplements. That is a choice for each parent to make based on their own child and situation, and that people know that they are getting milk with a vitamin supplement hidden inside and not a food that is naturally rich in calcium or b12. Everest Burger – Gluten-Free and Vegan Restaurant in Glencoe

I normally avoid eating out at any restaurants that are not dedicated gluten-free or at least very serious about their commitments to the gluten-free diner. I do not like turning into crazy stress lady who quizzes the people at the restaurants. I do not like that version of myself…. but I like being violently ill even less. That said, today I overcame my fear, became a crazy person, and found two new places to eat. Everest Burger is an unassuming storefront in a strip mall on the Winnetka / Glencoe border. It is a burger joint with real burgers and fries. The food is organic, hormone free, antibiotic free, and the fish is wild. Everest has a dedicated fryer for its french fries which are tiny shoestring affairs made from organic potatoes, salt and rice bran oil (for frying). It also has good, home made, gluten-free buns. And they have lots of combinations for burgers. They also have vegan options that are not a soyburger. So I went out ordered a burger with turkey bacon, avocado, tomato, and lettuce on a gluten-free bun. and fries. And it was great. Watch Engine 2 Kitchen Rescue For Free

OK, the Engine 2 diet allows for a lot more whole grains than I would like to see, but in general the emphasis on healthy eating and science based diet changes is dead on. This is a new one hour reality special where Rip Esseltyn (son of Caldwell Esseltyn and firefighter) goes into people’s homes and shows them all the stuff that they think is healthy which is not. I am not convinced that the level of stringency on avoiding fat or meat in the Engine 2 diet is warranted or even advisable for many people (children especially seem to need more of both, and while there are no primates that consume dairy after weaning, there are definitely meat and egg eaters), but most of what he does and debunks is pretty standard stuff (kale good, refined mystery vegetable oil…not so much), and he has some easy ideas for cooking. Really easy. Four ingredient easy. What If Some Autism is Just a B12 Deficiency?

This week the New York times once again gave celiac disease a role in the magazine section. The story was of a man who had trouble walking and twitching muscles. He felt generally lousy. His motor skills declined. He was hospitalized and they ran a battery of tests. They could not find any of the common problems. The twitching stopped and they sent him home only to have him end up back in the ER again within two weeks. Eventually they figured out what was wrong with him. He had a B12 deficiency. Which is incredibly common especially in people over the age of 50. It is easy and inexpensive to test for and easy to find. Except that they never looked for it. How to Improve Gefen Gluten-Free Kosher for Passover Chocolate Cake

This may be my shortest post ever but its a quick shout out to all my friends who will be celebrating Passover next week and need to do it gluten-free. Gefen makes a pretty good gluten-free chocolate frosted cake mix that is kosher for Passover. The problem is that if you follow the instructions on the box (which I think may have been translated by someone who thought his English was better than it is), the frosting turns to soup and the cake ends up too dense. So here are my tips for fixing the mix. 1) Do not, under any circumstances, add that whole tablespoon of water to the frosting mix. Use a teaspoon. That will give you something that is at least icing. I am convinced this is a mistake in understanding English measures. 2) Add some kosher for Passover instant coffee granules to the water you will be using to make the cake. Do not add a lot of coffee as potato starch based flours seem to amplify flavors. Try about 1/2 a teaspoon. Otherwise the cake is just too sweet. 3) Beat the eggs silly. Get some air in there. Flourless chocolate cake is delightful because the eggs add air. So beat the batter longer than they say to and at a higher speed. I am planning to try out a few more mixes this...

Where to buy Gluten-Free Dairy-Free Corn-Free Frozen Pizza

Yes, it exists and we had it for dinner tonight. One of the challenges of being a working mom with a child who needs a special diet is that if I have to work late (and I go to extremes to avoid this) it is a big problem, because he needs to eat dinner and gluten-free takeout is not what you would call widely available. Enter the gluten-free dairy-free corn-free (I think) frozen pizza. Sure its expensive by frozen pizza standards but it is much less costly than eating at a fast food place. And it contains soy. And no, its not exactly like the frozen pizzas that use real cheese. But its PIZZA. And for someone like me who is up against a deadline at work, its a miracle. Amy’s is the company that makes the pizza. They make two varieties. My son prefers the one with spinach and so do I. There is very little actual spinach (this is not health food, just pizza) but it adds more substance and texture and the fake cheese, like all fake cheese, is not something I want a lot of since it doesn’t really stand on its own. Her in the Chicago suburbs this pizza is available at large grocery chains like Jewel and Dominick’s. It is also in the Whole Foods system. I have not done price comparisons yet...

Why Celiacs Shop Kosher for Passover

It started years ago when my son was taking swimming lessons with a boy who went to a local school for observant Jews. While the boys practiced not drowning, his mom and I were talking by the side of the pool. I told her about our struggles with gluten and corn and she suddenly said. “You need to stock up on Kosher for Passover food. There are tons of gluten-free dairy-free corn-free choices. No rice, no corn, no wheat no barley…” Best advice ever. Right now my chest freezer is full of frozen pancakes and frozen waffles. We have chips fried in palm oil instead of corn oil. We have individually packaged snack sized onion ring snacks. My pantry is overflowing with gluten free noodles and matzoh and other kosher for Passover crackerlike foods. I have bins full of Italian bread crumbs. And all of it is gluten, corn, dairy and rice free! Sure, when we check out the cashiers are shocked at $9 for a box of 12 frozen pancakes and over $1 a bag for the onion rings, but for us, this is just such a blessed dose of normalcy. Five Minute Gluten-Free Dairy-Free Sweet Potato Gnocchi in “Butter” Sage Sauce

As a mom who works full time and cannot just give up and order a pizza, I do not need thirty minute meals, especially the ones that have forty minute cleanups. I need ten minute meals that can be made in one pot. Actually what I really need is that replicator thingy from Star Trek where you just walk up to it and say something like “gluten-free spaghetti and meatballs. hot” and the machine makes it for you and even makes a plate and a fork. I want one of those. Until then, however, I am perfecting my five and ten minute meals, and this one is well worth the wait (oh I crack myself up). Nuovo makes gluten-free, dairy-free corn-free gnocchi. They did not do this for the sake of the food allergic but rather because it turns out that wheat flour makes for rubbery, chewy, gnocchi as the very necessary rolling and kneading activates the gluten in the flour. So they figured out that making the gnocchi entirely with potato and sweet potato products made for lighter more perfect gnocchi…which happen to be gluten-free! Staying Motivated to Stay Gluten and Dairy Free

Whenever I read about the hassles involved in eating gluten and dairy free I read about the actual purchase, preparation and management of the food. That, honestly, was one of the smaller hurdles in my mind. The larger hurdles were in dealing with doctors and schools and friends and family. It was waiting for months to see what the diet would do. It was dealing with the unrelenting medical and peer pressure to feed your child “normal” food. It was wondering if this was even going to work or if you were screaming at someone about cross contamination for no reason. I know that I got antifungals strictly because the doctor did not want to deal with me. She stared at me as if perhaps, I had left my tinfoil hat at home today. People, some of whom are doctors, will tell you that there is no scientific evidence that this diet works and that research has not shown it to be helpful. Then they try to tell you that milk is necessary, and wheat has fiber. This makes me wonder if they forgot their tinfoil hats. If we need milk how do you explain 1 billion people in China when most of who do not drink milk? Or in Africa where there is virtually no dairy. When Fruit is Not As Healthy As a Candy Bar

Last summer I got into these freeze dried mango slices. The only ingredient in the entire package is mango. How unhealthy can it be? Pretty bad actually. I have been trying to watch my sugar intake for a while now and I am good at math. Which is why I was horrified to realize that a 1.7 ounce bag of mango slices contains 1.4 ounces of sugar. Check it out for yourself. That bag contains 39 grams of sugars. That is 1.375 ounces in a 1.7 ounce bag. So I am eating a bag of mango flavored sugar with a little fiber and vitamin C. Ouch! Here is the thing. As a mom I would never think to give my child a Snickers bar for a snack. Yet oddly that candy bar contains more protein, more fiber and is in many ways healthier than the freeze dried fruit. Amazing isn’t it. Now this is not true of the freeze dried blueberries which have a lot less sugar and more nutrients. They also are not as sweet or tasty. I will continue to feed my son and myself fresh unprocessed mango slices as part of a meal. But I probably won’t be eating too much freeze dried fruit in the future.
