Yes, I once loved the Starbucks Eggnog Latte. I even had it with soy milk. Unfortunately it did not love me back and since I really do not want to spend that kind of time perusing the unusual lighting choices Starbucks has chosen for their bathrooms, I no longer drink the eggnog latte.
Except, of course, that I absolutely love eggnog latte.
So this is my easy homemade version. Is it the same as the one at Starbucks? No, it is not. None of the commercially available vegan eggnogs (and there are soy free ones) whiten the coffee the way that real eggnog does. You can add a little So Delicious Original Flavor creamer to the eggnog if you want to whiten your drink. For me it is just easier to put it in a to go cup with a lid and pretend it is whiter. It tastes like the real thing. I also never had whipped cream on mine. You can use soy or rice whip if you want to. I use the aerosol can of soy whip all the time for pumpkin pie and other items like that. I just don’t want to bother with that for my morning coffee.
One thing that makes this easy is that I make my own brewed coffee at home in big pots and then save most of it in the refrigerator to be microwaved later when I want a hot cup. Black coffee reheats beautifully and it works well in many recipes. So I literally am just combining the ingredients and microwaving. I am not brewing a new pot of coffee.
An alternative if you are more of a foodie is to use espresso and a french press and then use more eggnog to make it more of a true latte. You can use an espresso machine. I even own one, but that is a lot of cleaning for one drink.

Ingredients
3/4 cup vegan eggnog
3/4 cup strong black brewed coffee
You can use any amount you want, but I found that a 50 / 50 combination yielded the best flavor.
Equipment
Measuring cup if you don’t plan to just “eyeball” it
Microwave safe mug
Instructions
Combine eggnog and coffee in a microwave safe mug. Put mug in microwave and heat on high for about 2 minutes (assume that the coffee is straight from the refrigerator, adjust as needed)
Serve.
